No style stuff today. It’s urgent I get this out of my head.
I’m putting up a paywall for what I’m feeling is my socarrat - that crispy stuff at the bottom of the paella pan that seems like a mistake but it’s where the good stuff is and you can’t stop fiendishly scraping the bottom of the pan for more crunchy, tasty, oily flavors and mouthfeel. The stuff that took the brunt of the heat for the entire time it took to create this beautiful aromatic concoction and got a little burnt and hardened and salty along the way. Real ones know that’s the good stuff. Initiates know it’s a delicacy. It is key. And as I become initiated into the ranks of being an “older woman” (by all means feel free to insert “hot” and/or “wise” ahead of this phrase when referring to me as such) I’m going to write about it in real time. For those who want to commiserate, co-celebrate, share feelings and feel seen, dedicate themselves to becoming a caramelized pleasure rather than a crusty annoyance, or for those curious about what they’re in for, here goes.
